I haven't used Gigabar myself, but my understanding is that versions 1.58 and 1.59 should work on the 720. Without a cable to connect the 720 to your PC, you have two options for installing Gigabar:
1
) Buy a USB-to-infrared adapter
(they cost about about 15 to 20 USD
) for your PC
(if your PC doesn't have an infrared port built in
) and install it with ActiveSync using infrared. See the bottom of the page linked below for a how-to guide on how to connect with ActiveSync over infrared:

Once you're connected, run on the PC the installer
(GBInstall.exe
) for the version of Gigabar that you downloaded from the Downloads page.

) If you don't want to buy an infrared adapter, another way to install Gigabar is to do the following:
a
) Right-click on GBInstall.exe in the folder on the PC where you downloaded it to. One of the choices that will appear will be "Extract to \GBInstall." Select that, and then go into the GBInstall folder that it creates.
b
) Copy the file
GIGAARM.CAB onto the Storage Card, and then place the Storage Card back in the 720.
c
) In "My Handheld PC on the 720, go to the location where you put the CAB file, and double-tap on the CAB file. This will install Gigabar right on the 720.
(If it gives you a warning that the program may not be compatible, just click "Yes" to continue installation. A window will open asking where you want to install it; just tap OK to let it install to the default location it has pre-selected.
